Tex-Mex Beef & Potatoes

Ingredients

- 1 lb Ground Beef
- 1 Red Bell Pepper, chopped
- ½ Yellow Onion, chopped
- 1 pkg. Taco Seasoning Mix
- ½ cup Water
- 4 cups Frozen cubed Southern Style Hash Browns, thawed
- 15 oz can Corn, drained
- 8 oz Velveeta, cut into cubes

Instructions

  1. In a large skillet on medium heat, brown meat with peppers and onions.
  2. Drain grease.
  3. Add taco seasoning, water, potatoes, and corn. Mix well and cover.
  4. Cook for 7-10 minutes or until potatoes are tender.
  5. Stir in Velveeta; cook uncovered, until melted.
  6. Serve and enjoy!
