Tropical French Toast

Prep Time: 20 minutes
Cook Time: 60 minutes

Ingredients

- 2 TB butter
- 4 eggs
- 1/2 cup orange juice
- 1/2 cup cream
- 8 oz can crushed pineapple
- 1/4 cup sugar
- 1 TB orange zest
- 1/2 tsp vanilla
- 1/4 tsp nutmeg
- 1 loaf French bread, cut into 1-inch slices
- 1/2 cup chopped pecans

Topping:
- 1/4 cup butter, softened
- 1/2 cup brown sugar
- 1 TB light corn syrup
- 1/2 cup chopped pecans

Instructions

  1. The night before, melt butter in a 9x13 pan and place bread in the pan.

  2. Combine all the ingredients and pour over the bread.

  3. Combine topping ingredients except for the nuts.

  4. Spread the topping over the bread and sprinkle with nuts.

  5. Cover and refrigerate.

  6. The next morning, remove from the fridge 30 minutes before ready to cook. Preheat the oven to 350 degrees.

  7. Bake for 50–60 minutes or until golden.
