Twice-Baked Sweet Potato

Prep Time: 20 minutes
Cook Time: 72 minutes

Ingredients

- 4 Sweet Potatoes
- 4 TB Brown Sugar
- 4 TB Butter, room temp
- 4 oz Cream Cheese, room temp
- 1/2 tsp Cinnamon
- 1/4 tsp Nutmeg
- 1/4 tsp Ginger
- Pinch of salt and pepper
- 1 cup Mini Marshmallows

Streusel Topping:
- 3 TB Flour
- 1/4 tsp Cinnamon
- 1/4 cup chopped Walnuts
- 2 TB Butter
- 3 TB Brown Sugar

Instructions

Created on November 5th, 2012

  1. Preheat oven to 400 degrees.
  2. Place sweet potatoes on a baking sheet and place in oven.
  3. Bake for 1 hour or until soft.
  4. Let cool and cut in half.
  5. Carefully remove pulp from skin and place pulp in a large mixing bowl.
  6. Place skin of potato on baking sheet and set aside.
  7. In another mixing bowl, combine brown sugar, butter, cream cheese, cinnamon, nutmeg, ginger, salt, and pepper.
  8. Mix well.
  9. Add butter mixture to potato pulp and fold in completely.
  10. Place 5-7 mini marshmallows in potato skin.
  11. Add the potato mixture to the top of the marshmallows.
  12. In another mixing bowl, combine streusel topping ingredients and sprinkle on top of potato.
  13. Place in oven and bake 10-12 minutes or until golden brown.
  14. Serve and enjoy!
