Triple Nut Candy

Prep Time: 10 minutes
Cook Time: 45 minutes

Ingredients

- 1 1/2 cups Sugar
- 1 cups heavy Whipping Cream
- 1/2 cup Light Corn Syrup
- 3 cups of Nuts (1 cup of 3 different types of nuts)
- (Pecans,Walnuts, Almonds, Cashews, Peanuts, Macadamia nuts - your choice)

*Butter for greasing pan

Instructions

Created on November 25th, 2003

  1. Preheat oven to 350°
  2. Place nuts in a single layer on a baking sheet.
  3. Bake for 4- 8 minutes until toasted, stirring once.
  4. Line a 8" square baking pan with foil
  5. Grease the foil with butter and set aside
  6. In a large saucepan, combine sugar, cream, and corn syrup.
  7. Bring to a boil over medium heat, stirring constantly.
  8. Once a boil begins, add toasted nuts.
  9. Continue cooking with out stirring until candy thermometer reads 238° soft ball stage.
  10. Remove from heat and stir with wooden spoon until creamy.
  11. Quickly spread into into the prepared pan.
  12. Let set for 8 hours or overnight.
  13. Using the foil, lift candy out of the pan.
  14. Cut into squares and store in an airtight container.
