Pasta Salad

Cook Time: 12 minutes

Ingredients

- 1 (12 oz) pkg pasta (any kind)
- 1 small head broccoli florets (cut into bite-size pieces)
- 1/4 cup chopped red onion
- 1/2 cup grated parmesan cheese
- 1 cup Italian salad dressing
- 1 (6.5 oz) jar artichoke hearts (drained and chopped)

Instructions

Created on September 17th, 2002

  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook following package directions.

  2. Wash and cut up broccoli while pasta is cooking. Add broccoli to pasta water for the final 2 minutes of cooking time.

  3. Drain pasta and broccoli and rinse with cold water until cool.

  4. Drain and chop the artichoke hearts. Chop the red onion.

  5. In a large bowl, combine artichoke hearts, parmesan cheese, salad dressing, and red onion. Add pasta and broccoli.

  6. Refrigerate or serve immediately. Serves 6.
