Sun-Dried Tomato Dip

Ingredients

- 2 (8 oz) pkgs cream cheese, softened
- 2 cups mayonnaise
- 1/4 cup onion, chopped
- 4 tsp garlic, minced
- 7 oz jar oil-packed sun-dried tomatoes, drained and chopped
- 2/3 cup chopped roasted red peppers
- 2 cups (8 oz) mozzarella cheese, shredded
- 2 cups (8 oz) Italian cheese blend, shredded
- 1 cup Parmesan cheese, shredded and divided

Instructions

  1. Preheat oven to 350 degrees.

  2. In a large bowl, combine the cream cheese, mayonnaise, onion, and garlic until blended.

  3. Stir in tomatoes and red peppers.

  4. Stir in mozzarella cheese, Italian cheese, and 1/2 cup Parmesan cheese.

  5. Pour into greased 9x13 baking dish.

  6. Sprinkle with remaining Parmesan cheese.

  7. Bake, uncovered, for 18-22 minutes or until edges are bubbly and light brown.

  8. Serve with crackers and enjoy!
