Red Velvet Whoopie Pies


1 Box Red Velvet Cake Mix
1/2 cup Butter, softened to room temperature
2 eggs

Filling Ingredients:
4 sticks (1 lb) Butter, softened to room temperature
4 cups Powdered Sugar
16oz Marshmallow Creme, such as Marshmallow Fluff
2 tsps. Vanilla

Preheat oven to 350 Degrees
In a large mixing bowl, combine cake mix, butter and eggs.
Mix well with electric mixer until combined.
Line a cookie sheet with parchment paper.
Using a cookie scoop, drop batter onto baking sheet about 2 inches apart
Bake 10-12 minutes.
Let cool before adding filling.

To make filling:
In a large mixing bowl, with an electric mixer, beat together butter and powdered sugar until smooth.
Beat in marshmallow creme and vanilla.
Mix until smooth and combined.

To assemble:
Ice cookie on the bottom and place another cookie on top. Enjoy!
