Red Velvet Whoopie Pies

Ingredients

Cookie ingredients:
- 1 Box Red Velvet Cake Mix
- 1/2 cup Butter, softened to room temperature
- 2 eggs

Filling ingredients:
- 2 sticks (1 lb) Butter, softened
- 8 oz Cream Cheese, softened
- 4 cups Powdered Sugar
- 16 oz Marshmallow Creme, such as Marshmallow Fluff
- pinch of salt
- 1 tsp Vanilla

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, combine cake mix, butter, and eggs.
  3. Mix well with an electric mixer until combined.
  4. Line a cookie sheet with parchment paper.
  5. Using a cookie scoop, drop batter onto the baking sheet about 2 inches apart.
  6. Bake for 10-12 minutes.
  7. Let cool before adding filling.

To make filling:

  1. In a large mixing bowl, with an electric mixer, beat together butter and powdered sugar until smooth.
  2. Beat in marshmallow creme and vanilla.
  3. Mix until smooth and combined.
    *Extra filling may be stored in refrigerator for 5-6 days.
    *This makes a great frosting for cupcakes

To assemble:
To assemble the whoopie pies: Turn half of the cooled cookies upside down. Pipe or spread with a knife the filling (about a tablespoon) onto that half.

Place another cookie, flat side down, on top of the filling. Press down slightly so that the filling spreads to the edges of the cookie. Repeat until all the cookies are used.

Put the whoopie pies in the refrigerator for about 30 minutes to firm before serving. You can dust with powdered sugar before serving.
