Bring 2 cups of water to a boil. (Leave lid on pan to bring to a boil faster) Turn off heat and add 2 cups rice. Place lid on pan and let sit covered for 5 minutes.
Heat olive oil in a skillet over medium heat. Crack egg and scramble. Season with salt and pepper. Chop green onions and any other vegetables; add to egg. Cook for 3-4 minutes, allowing veggies to soften
Add rice, butter, soy sauce and sesame seeds. Mix together and season with salt and pepper. Cover pan with lid and cook for 3 minutes. Remove lid and stir. Cover pan and let cook for 3 minutes.
Rice is finished when it starts to turn a golden brown. Serve with egg rolls and enjoy!
