Broccoli & Tortellini Salad

Ingredients

- 6 slices of bacon
- 3 heads fresh broccoli, chopped
- 20 oz fresh cheese-filled tortellini
- 1 cup mayonnaise
- 1/2 cup sugar
- 2 tsp apple cider vinegar
- 1 cup raisins
- 1 cup sunflower seeds
- 1 red onion, diced

In a skillet or microwave, cook bacon until evenly brown. Drain, crumble and set aside.

Bring a large pot of slightly salted water to a boil. Cook tortellini according to package directions (about 8-10 minutes). Drain and rinse under cold water.

In a small bowl, combine mayonnaise, sugar, and vinegar to make the dressing.

In a large bowl, combine broccoli, tortellini, bacon, raisins, sunflower seeds, and red onion. Pour dressing over salad and toss. Serve and enjoy. Tastes even better if made at least 1 hour ahead!
