Broccoli & Tortellini Salad

Ingredients

6 slices of Bacon
3 heads fresh broccoli, chopped
20 oz Fresh Cheese-filled Tortellini
1 cup Mayonnaise
1/2 cup Sugar
2 tsp. Apple Cider Vinegar
1 cup Raisins
1 cup Sunflower Seeds
1 Red Onion, diced

Instructions

In skillet or microwave, cook bacon until evenly brown. Drain, crumble and set aside.

Bring a large pot of slightly salted water to a boil. Cook Tortellini according to package directions (about 8-10 minutes). Drain and rinse under cold water.

In a small bowl, combine mayonnaise, sugar and vinegar to make the dressing.

In a large bowl, combine broccoli, tortellini, bacon, raisins, sunflower seeds and red onion. Pour dressing over salad and toss. Serve and enjoy. Tastes even better if made at least 1 hour ahead!
