Gooey Butter Cake

Ingredients

Crust Ingredients:
1-18 ¼ oz pkg. Yellow Cake Mix **
1 egg
1 stick Butter, melted

Filling Ingredients:
8oz pkg. Cream Cheese, softened
2 eggs
1 tsp. Vanilla
1 stick Butter, melted
16oz box Powdered Sugar

Instructions

Created on November 3rd, 2006

Preheat oven to 350 degrees.
Spray 9x13 baking dish with Pam.
In a large bowl, combine cake mix, 1 egg and 1 stick of melted butter.
Pat into prepared baking dish.
In same bowl, beat cream cheese until smooth.
Add 2 eggs and vanilla and blend.
Add butter; blend.
Add powdered sugar and mix well.
Spread over crust.
Bake for 40 – 50 minutes. You want the center to be a little gooey so careful not to over bake.
** VARIATIONS:

  1. Add a 20 ounce can of drained crushed pineapple to the filling
  2. Use a lemon cake mix instead of yellow cake mix. Add2 TB Lemon juice and some zest to the filling
  3. Use a chocolate cake mix instead of yellow cake mix. Add 1 cup choc chips and ½ cup chopped nuts to filling.
  4. Use a spiced cake mix instead of yellow cake mix. Add ½ cup chopped nuts and 1 cup chopped carrots to filling.
  5. Use a chocolate cake mix instead of yellow cake mix. Add ¾ to 1 cup of peanut butter to filling.
