Easy Tortilla Soup

Prep Time: 20 minutes
Cook Time: 30 minutes

Ingredients

- 2 cans Chicken and Rice soup, Family size
- Shredded meat of 1 rotisserie chicken
- 2 cans Rotel
- 2 cans Ranch Style Beans, undrained
- 1 box Uncle Ben's instant Rice, (white, Spanish, or wild)
- 2 cans Chicken Broth**
- Tortilla Chips
- Cheddar Cheese, shredded

Instructions

Created on November 8th, 2005

Mix all ingredients in a large pot.
Bring to a boil and then let simmer at least 30 minutes.
To serve:
Top with cheese and tortilla chips.

**The longer the soup cooks, the thicker it gets. You can add more chicken broth if needed.
