Preheat oven to 350 degrees.
For crust: In a medium bowl, combine ground crumbs, sugar, and melted butter. Mix well till a crumbly mixture. Press into a pizza pan or 6 individual tart pans. Bake 8 minutes. Let cool.
For filling: Combine cream cheese, sugar and lemon juice with an electric mixer. Add whipping cream and beat until light and fluffy. Spread into cooled crust and chill several hours.
For topping: Arrange sliced fruit on top of filling. Combine apricot preserves and water and brush over top of fruit. Enjoy!
