* To cook Chicken Breasts - Serving tip – Cut flour tortilla into ¼ inch strips, place in bottom of bowl. Ladle chili on top. Garnish with sour cream and grated mozzarella cheese. Enjoy!<?xml:namespace prefix = o ns = "urn:schemas-microsoft-com:office:office" />
Place chicken in baking dish, pour in 1 can of chicken broth, cover with tinfoil and bake at 350 degrees for 1 hour. Remove chicken and reserve broth.
If using baked chicken breasts, shred meat and season with pepper and garlic salt.
If using rotisserie chicken, remove meat and shred - no need to season.
In a large pot over medium high heat, heat vegetable oil. Add onions and cook until onions are clear.
Add chicken and saute for 2-3 minutes.
Add remaining ingredients - chicken broth, green chilis, great northern beans, cream of chicken soup, garlic powder, cumin, oregano, and red pepper.
Bring to a boil then reduce heat and simmer for at least 30 minutes.Serve and enjoy!
