White Chicken Chili

Cook Time: 60 minutes

Ingredients

- 3 TB Vegetable Oil
- 1 Yellow Onion, chopped
- Meat from 1 rotisserie chicken
- 2 cans Chicken Broth
- 2 (4oz) cans chopped Green Chilis
- 2 (15oz) cans Great Northern Beans, undrained
- 1 can Cream of Chicken Soup
- 1 TB Garlic Powder
- 2 tsp ground Red Pepper
- 2 tsp ground Cumin
- 1 tsp Oregano

Optional:
flour tortillas, sour cream mozzarella cheese

Instructions

In a large pot over medium-high heat, heat vegetable oil.
Add onions and cook until onions are clear.
Add chicken and saute for 2-3 minutes.
Add remaining ingredients - chicken broth, green chilis, great northern beans, cream of chicken soup, garlic powder, cumin, oregano, and red pepper.
Bring to a boil, then reduce heat and simmer for at least 30 minutes.
Cut flour tortilla into 1/4 inch strips, place in the bottom of bowl.
Ladle chicken chili on top.
Garnish with sour cream and grated mozzarella cheese.
