Spiced Fruit Bake

Ingredients

- 2 (15oz) cans sliced pears in syrup, undrained
- 1 (29oz) can sliced peaches in syrup, undrained
- 1 (20oz) can pineapple chunks in juice, undrained
- 1 (15.25oz) can apricot halves in syrup, undrained
- 1 (14.5oz) can pitted red tart cherries in water, drained
- 1/4 cup brown sugar
- 1 TB cornstarch
- 1/2 tsp cinnamon
- 1/2 tsp ginger
- 1/4 cup butter

Instructions

  1. In a large mixing bowl, drain pears, peaches, pineapple, and apricots.

  2. Combine fruit in another large bowl; add cherries.

  3. Spray a 3 qt round baking dish with Pam. Pour fruit into baking dish and set aside.

  4. Stir juices together and remove 1 cup of juice.

  5. In a medium saucepan, combine brown sugar, cornstarch, cinnamon, and ginger.

  6. Gradually add 3/4 cup of juice mixture.

  7. Add butter and cook over medium heat, stirring constantly, for 5 minutes or until butter is melted and mixture is thickened and bubbly.

  8. Remove from heat and add 1/4 cup of juice mixture.

  9. Pour sauce over fruit mixture.

  10. (At this time you can cover and refrigerate overnight. The next morning, uncover and let stand 10 minutes before baking)

  11. Bake at 350 degrees for 30 minutes or until thoroughly heated.
