Praline Pecan Cake

Cook Time: 50 minutes

Ingredients

Cake ingredients:
- 1 pkg Butter Pecan Cake Mix
- 1 container Coconut Pecan Frosting
- 4 eggs
- 3/4 cup Vegetable Oil
- 1 cup Water
- !/2 cup Chopped Pecans

Frosting ingredients:
- 1 cup Brown Sugar
- 5 TB Butter
- 1/4 cup milk
- 1 tsp Vanilla
- 1 1/2 cups Powdered Sugar, sifted (Sifting the powdered sugar helps prevent lumps)
- 3/4 cup chopped pecans

Instructions

Created on March 13th, 2011

  1. Preheat oven to 350 degrees.

  2. Grease and flour a Bundt pan. (I use Baker's Joy spray)

  3. In a large mixing bowl, combine cake mix, frosting, eggs, oil, water, and the remaining 1/2 cup of chopped pecans.

  4. Mix well on medium speed for 2 minutes.

  5. Pour batter into prepared bundt pan.

  6. Bake for 50 minutes or until a toothpick inserted in center comes out clean. (I started checking at 45 minutes)

  7. Let cool for 15 minutes before removing cake from pan.

While cake is continuing to cool, make frosting:

  1. In a medium saucepan, combine butter, brown sugar and milk over medium heat
  2. Whisk and bring to a boil and boil for 1 minute.
  3. Remove from heat and using a hand mixer, mix in vanilla and sifted powdered sugar. Beat until smooth.
  4. Stir in pecans.
  5. Pour icing on top of cake.
