Cheesecake

Ingredients

**Ingredients for Crust:**
1 1/2 cups graham cracker crumbs (about 9 graham crackers)
5 TB Butter, melted
2 TB Sugar (you can use brown sugar or both)


**Ingredients for Cheesecake**:
- 5 (8 oz) blocks cream cheese, room temperature
- 2 cups sugar
- 1 tsp vanilla
- 8 oz sour cream, room temperature
- 1/2 pint (small carton) whipping cream, room temperature
- 5 eggs, room temperature

**Directions for preparing and baking graham cracker crust for cheesecake:

  1. Preheat oven to 325.
  2. In a food processor, crush graham crackers.
  3. In a medium bowl, combine graham cracker crumbs, butter and sugar.
  4. Pour in to 9" springform pan.
  5. Using the bottom of a measuring cup, press the crust evenly and firmly into the bottom and up the sides of the pan.
  6. Bake until golden brown. About 15-20 minutes.
  7. Cool on a rack.

**Directions for Cheesecake:

  1. Preheat oven to 400 degrees.
  2. Using a food processor, combine sugar and cream cheese. Mix well.
  3. Add vanilla, sour cream, and whipping cream. Mix well.
  4. Add eggs - one at a time - blending to break.
  5. Pour into prepared springform pan.
  6. Bake for 15 minutes at 400 degrees.
  7. Turn oven down to 375 degrees and bake for 1 hour.
  8. Turn off oven, crack the oven door and leave in oven for 45 minutes.
  9. Remove from oven and refrigerate overnight without covering.
  10. Enjoy!
