Southwest Black Bean and Rice

Cook Time: 30 minutes

Ingredients

- 2 cups rice
- 1 can Black Beans, drained and rinsed
- 1 can Mexican-style Corn, drained
- 1 can Rotel, slightly drained
- 1 tsp Cumin
- ½ tsp Garlic Powder
- 1 TB Chili Powder
- ¼ tsp – ½ tsp Ground Red Pepper (according to your taste)
- 2 cans Cream of Chicken Soup
- 1 cup Cheddar Jack Cheese, shredded

Instructions

  1. Preheat oven to 350 degrees.

  2. Spray 9x13 baking dish with cooking spray.

  3. In a large bowl, combine rice, beans, corn, Rotel, cumin, garlic powder, chili powder, red pepper, and cream of chicken soup. Stir to blend.

  4. Pour into baking dish. Bake at 350 for 25-30 minutes or until bubbly.

  5. Sprinkle with cheese 5-8 minutes before done. Serve with sour cream, chopped green onions, and tomatoes. Enjoy!
