Spring Salad/Citrus Dressin


¾ cup Walnut pieces
1 Bag mixed Salad Greens
1 can Mandarin Oranges, drained or 2 Large Navel Oranges, peeled and sectioned
½ Red Onion, sliced
½ cup Vegetable Oil
2/3 cup Orange Juice
¼ cup Sugar
2 TB Balsamic Vinegar
2 tsp. Dijon Mustard
¼ tsp. Dried Oregano
¼ tsp. Black Pepper

Place walnut in a skillet. Over medium heat, cook 5 minutes, stirring constantly until lightly browned.

In a jar with a tight fitting lid, combine orange juice, sugar, vinegar, mustard, oregano, pepper and oil.

In a large bowl, tow the toasted walnuts, salad greens, oranges and red onion. Sprinkle feta cheese on top.

Drizzle dressing over and salad and serve.
