Apple Cider Mini Muffins

Ingredients

- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tsp cinnamon
- 1 large egg (room temperature)
- 2/3 cup brown sugar
- 1/2 cup apple butter
- 1 tsp vanilla
- 1/3 cup honey
- 1/3 cup apple cider
- 1/3 cup plain yogurt
- 2 TB canola or vegetable oil
- Cooking spray

**Cinnamon Sugar Topping:**
- 2 TB melted butter
- 1/4 cup sugar
- 1 TB cinnamon

Instructions

Preheat oven to 400 degrees.

Spray a mini muffin pan with cooking spray.

In a large mixing bowl, combine the flour, baking powder, baking soda, salt, and 2 tsp cinnamon.

In another large mixing bowl, whisk together the egg, brown sugar, apple butter, vanilla, honey, apple cider, yogurt, and oil.

Pour the wet ingredients into the dry ingredients and stir until combined. Don't overmix - a few lumps are ok :)

Using a cookie scoop, put the batter into the pan filling each hole 3/4 full.

Bake for 10-12 minutes or until center is done. Cool a couple of minutes.

While muffins are baking, combine the 1/4 cup sugar with the 1 TB cinnamon.

Brush the top of the still warm muffin with the melted butter then roll in the cinnamon sugar mixture to coat.

Serve warm or room temperature.

You can dust with powdered sugar if you prefer.
