Apple Coffeecake

Ingredients

- 1 stick butter, softened
- 1 ½ cups brown sugar
- 2 eggs
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ tsp salt
- 8 oz sour cream
- 1 tsp vanilla
- 2 apples, peeled, cored, and chopped

**Crumb Topping Ingredients:**
- 1/2 cup brown sugar
- ½ cup all-purpose flour
- ½ tsp cinnamon
- 4 tbsp butter, softened

**Brown Sugar Glaze Ingredients:**
- ½ cup brown sugar
- ½ tsp vanilla
- 2 tbsp water

Instructions

Created on October 10th, 2006

Preheat oven to 350 degrees. Lightly grease a 13x9 baking dish.

In a large mixing bowl, cream together 1 stick butter and 1 ½ cups brown sugar. Add eggs one at a time, beating after each addition.

In a small mixing bowl, sift 2 cups flour, baking soda, cinnamon, and salt. Add to the sugar mixture, alternating with the sour cream and vanilla. Stir in apples. Pour into baking dish.

Make crumb topping: Combine brown sugar, cinnamon, flour, and butter with a pastry cutter or fork. Sprinkle over cake and then bake until set, 40-45 minutes. Remove and let cool for 10 minutes.

To make glaze: Combine brown sugar, vanilla, and water until smooth. Drizzle over cooled cake and let harden slightly. Serve warm and enjoy!
