Cover a cookie sheet with aluminum foil and bake the bacon at 400 degrees for 10 minutes. The bacon can overlap on the tray because it is just being partially cooked to get some of the grease out of it.
While the bacon is cooking, combine the cinnamon and sugar in a bowl.
Line a cookie sheet with edges completely covered with foil.
Place a cookie cooling rack on top of the foiled cookie sheet. Spray with Pam.
Cut partially cooked bacon into squares about 1 inch x 1 inch. Dredge the cut bacon squares in the sugar mixture and place on the cookie cooling rack touching each other.
Broil at 500 degrees, watching constantly for about 5-10 minutes. It is important to carefully watch the bacon because it can easily burn.
Remove the caramelized bacon while it is still hot and let them cool separately on foil or a plastic plate so that they do not stick together.
Caramelized bacon freezes well in plastic bags. When reheating, be sure to lay them out separately so that they do not stick together.
