Bacon-Wrapped Pork Medallion

Ingredients

- 8 slices Bacon
- 2 lbs Pork Tenderloin
- Lemon Pepper
- Garlic Salt
- 2 TB Butter
- 2 TB Olive Oil

Instructions

  1. Preheat oven to 400 degrees.

  2. Slice the tenderloin to create medallions, about 2 inches thick.

  3. Wrap the medallions with the bacon strips securing with toothpicks.

  4. Season both sides of the medallions with lemon pepper and garlic salt.

  5. In a large skillet over medium-high heat, melt butter and olive oil.

  6. Cook each medallion for 4 minutes on each side.

  7. Spray a baking dish with cooking spray.

  8. Place medallions in baking dish and bake 17-20 minutes. The temperature of the pork should be 160 degrees.

  9. Remove from oven and serve. Enjoy!
