Preheat oven to 350 degrees.
Place carrot slices and sweet potato cubes into a 9x13 baking dish.
Drizzle with olive oil and toss to coat.
Sprinkle salt, pepper, apricots, raisins, and brown sugar on top.
Toss to coat.
Combine ginger ale, cranberry juice, and orange juice, drizzle over the potato mixture.
Cover and bake in a 350-degree oven for 75 minutes or until potatoes are tender, stirring once at 45 minutes.
Uncover after baking for 75 minutes and bake an additional 15 minutes or until the liquid is thick.
