Chicken Ziti


8 oz uncooked penne or bow tie pasta
½ yellow onion, chopped
1 tsp. minced garlic
1 TB olive oil
3 boneless Chicken Breasts, cut into bite-size pieces
¼ cup White Wine
¼ cup chopped fresh Basil
1 TB dried parsley flakes
10oz jar Alfredo Sauce
¾ cup sliced sun-dried tomatoes in olive oil, drained
½ cup grated Parmesan Cheese, divided
¼ tsp. Pepper


Created on November 10th, 2008

Preheat oven to 350 degrees.

Cook pasta according to pkg. directions; drain.

In a large skillet over medium heat, cook yellow onion and garlic in olive oil for 30 seconds.

Add chicken and cook for 3 minutes or until no longer pink.

Add wine, basil and parsley; cook for 1 minute.

In a large bowl, combine cooked pasta, chicken mixture, alfredo sauce, tomatoes,  ¼ cup of Parmesan cheese and pepper.

Spoon into 9x13 baking dish that has been sprayed with cooking spray.

Sprinkle with remaining ¼ cup Parmesan cheese.

Cover and bake for 15 minutes.

Uncover and bake an additional 10-15 minutes or until heated through.

Serve and enjoy!
