Crustless Spinach Quiche

Prep Time: 15 minutes
Cook Time: 30 minutes

Ingredients

- 1 TB Vegetable Oil
- 1 small Yellow Onion, chopped
- 10 oz pkg Frozen Spinach, thawed and drained
- 5 eggs, beaten
- 3 cups shredded Monterey Jack Cheese
- 1/2 tsp Salt
- 1/2 tsp Pepper

**To personalize:**
- Add your own vegetables
- Mix up your cheeses
- Add meat if you like

Instructions

Created on March 7th, 2011

  1. Preheat oven to 350 degrees.

  2. Lightly grease a 9-inch pie plate.

  3. In a large skillet, heat oil over medium-high heat.

  4. Add onions and cook, stirring until onions are soft.

  5. Stir in spinach and continue cooking until excess moisture has evaporated.

  6. In a large bowl, combine eggs, cheese, salt, and pepper.

  7. Add spinach mixture and stir to blend.

  8. Pour into prepared pie pan.

  9. Bake in preheated oven until eggs are set, about 30 minutes.

  10. Let cool for 10 minutes before serving.
