Fall Fruits Salad with Lemon Poppyseed Dressing

Ingredients

- ½ cup sugar
- ½ cup lemon juice
- 2 tsp diced onion
- 1 tsp Dijon mustard
- ½ tsp salt
- 2/3 cup vegetable oil
- 1 tbsp poppy seeds

**Salad Ingredients:**
- 1 head romaine lettuce, washed and torn into bite-sized pieces
- 1 ½ cup shredded mozzarella cheese
- 1 cup chopped walnuts (or any other nut)
- ¼ cup dried cranberries
- 1 apple, peeled, cored and diced
- 1 pear, peeled, cored and diced

Instructions

Dressing Instructions:
In a food processor or blender, combine sugar, lemon juice, onion, mustard, and salt. Process until well blended. With machine running, add oil in a slow steady stream until mixture is thick and smooth. Add poppy seeds and process a few seconds more.

Salad Instructions:
In a large serving bowl, combine the romaine lettuce, shredded cheese, nuts, cranberries, apples, and pears. Toss to mix then pour dressing over salad just before serving and toss to coat.
