Greek Chicken Pasta


8oz uncooked Pasta
1 TB Olive Oil
3-4 Garlic cloves, minced
½ Red Onion, chopped
4 Chicken Breasts, cut into bite size pieces
Garlic Salt and Coarse Black Pepper, to taste
14 oz can marinated artichoke hearts, drained and chopped
2 large Tomato, chopped or 1 can chopped Tomatoes
2 pkgs. Crumbled Feta Cheese
3 TB Fresh Parsley, chopped
2 TB Lemon Juice, fresh squeezed
1 TB dried Basil

Bring a large pot of lightly salted water to a boil. Cook pasta according to directions on package.<?xml:namespace prefix = o ns = "urn:schemas-microsoft-com:office:office" />


While pasta is cooking; heat olive oil in a large skillet over medium high heat. Add onion and garlic, and sauté for 2 minutes.


Season chicken pieces with garlic salt and black pepper, add chicken to the skillet. Cook, stirring occasionally, until chicken is no longer pink, about 6 minutes.


Reduce heat to medium-low, and add the artichoke hearts, tomato, feta cheese, parsley, lemon juice, basil and cooked pasta. Stir until heated through, about 2-3 minutes. Remove from heat; Serve and Enjoy!
