Spring Salad Citrus Dressing

Ingredients

- ¾ cup Walnut pieces
- 1 Bag mixed Salad Greens
- 1 can Mandarin Oranges, drained or 2 Large Navel Oranges, peeled and sectioned
- ½ Red Onion, sliced
- ½ cup Vegetable Oil
- 2/3 cup Orange Juice
- ¼ cup Sugar
- 2 TB Balsamic Vinegar
- 2 tsp. Dijon Mustard
- ¼ tsp. Dried Oregano
- ¼ tsp. Black Pepper

Instructions

  1. Place walnuts in a skillet. Over medium heat, cook for 5 minutes, stirring constantly until lightly browned.

  2. In a jar with a tight fitting lid, combine orange juice, sugar, vinegar, mustard, oregano, pepper, and oil.

  3. In a large bowl, toss the toasted walnuts, salad greens, oranges, and red onion. Sprinkle feta cheese on top.

  4. Drizzle dressing over the salad and serve.
