Brown Sugar Glazed Pumpkin

Cook Time: 30 minutes

Ingredients

- 1/3 cup Milk (preferably room temperature)
- 1 can Pumpkin Puree (15oz can)
- 2 Eggs (preferably XL and at room temperature)
- 1 tablespoon Vanilla
- 2 teaspoons Pumpkin Pie Spice
- 1 box Yellow Cake Mix (18oz)
- 1 teaspoon Baking Soda

Topping:
- 1/2 cup Brown Sugar
- 1/2 cup Flour
- 4 tablespoons Melted Butter

Glaze:
- 1/4 cup Sugar
- 1/2 cup Brown Sugar
- 1 teaspoon Vanilla
- 1/4 cup Heavy Whipping Cream
- 1/2 cup chopped Pecans or other nut of your choice (optional)

Instructions

Created on November 11th, 2013

  1. Preheat oven to 350 degrees.
  2. Prepare muffin pans by brushing cooking oil over the top of the pan to prevent muffins from sticking.
  3. Place 24 paper cups in muffin tins. Set aside.
  4. In a large bowl, combine milk, pumpkin, eggs, 1 tablespoon vanilla, and pumpkin pie spice. Mix well.
  5. Add the cake mix and baking soda. Mix until combined.
  6. Using an ice cream scoop, place one large scoop of batter into each muffin cup. This recipe should make 24 muffins. Set aside.

Topping:
7. In a small bowl, melt butter.
8. Add brown sugar and flour. Mix well and crumble on top of muffin batter.
9. Place muffins in preheated oven and bake for 18-22 minutes until done.

Glaze:
10. While baking, in a small saucepan combine brown sugar, sugar, vanilla, and heavy whipping cream.
11. Heat over medium heat until the mixture starts to bubble on the sides (a simmer).
12. Remove from heat and stir until sugar is dissolved. Add nuts and mix well.

  1. When muffins are done, remove from oven and poke holes in the top of the muffins.
  2. With a large spoon, spoon glaze over the top of muffins to cover all surfaces.
  3. Serve warm or at room temperature. Enjoy!

To make as a breakfast cake,

  • Prepare a 9x13 baking dish with baking flour spray. Prepare ingredients the same.
  • Pour into baking dish. Sprinkle topping over the entire cake and bake for 25-30 minutes until done.
  • Remove and poke holes in cake and pour glaze over the top of cake. Serve and enjoy!
