Key Lime Cheesecake Private

Ingredients

2 cups graham cracker crumbs, crushed (about 2 sleeves)
1/2 cup Butter, melted
1/4 cup Sugar

3 - 8oz pkgs Cream Cheese, softened
1 cup Sugar
1 cup Sour Cream
2 tsp. Vanilla
4 Eggs, room temperature
3/4 cup fresh Lime Juice

Instructions

Preheat oven to 375 degrees.

In a medium mixing bowl, combine graham cracker crumbs, sugar and melted butter.

Pour crumbs into 9"or10" springform pan coated lightly with non-stick cooking spray.

Using the bottom of the measuring cup, press the crumbs down into the base of the pan and up the sides of the pan.

Place on cookie sheet and bake in oven for 7-8 minutes; no longer.

Remove and set aside.

In a large mixing bowl, beat cream cheese until smooth and creamy, no lumps.

Add sugar and beat until smooth, scraping down the sides and bottom of the bowl frequently to remove all lumps.

Add sour cream, eggs and vanilla.

When smooth, stir in lime juice.

Pour over prepared crust and place in oven.

Bake at 375 degrees for 15 minutes then lower temperature to 250 degrees and continue baking for 55 minutes.

Turn oven off, open oven door and leave in oven for 30 more minutes.

Remove from oven and let cool on wire rack for 30 minutes.

Cover and refrigerate for at least 6 hours before serving.

Top with whipped cream and enjoy!
