Cut onions into thin slices, removing the outer skin and separating the rings.
Place in a 13x9 baking dish and pour buttermilk over the rings.
Cover and refrigerate for 2-24 hours.
Pour oil to a depth of about 2 inches into Dutch oven or large deep skillet
Heat to 350 degrees.
In a large bowl, combine flour, salt and pepper.
Dredge onion rings in flour mixture and place on baking sheet.
Fry onion rings in batches, about 2 minutes or until turning brown.
Drain on paper towels.
Serve immediately or keep warm in a 200 degree oven until ready to serve.
