Apple coffeecake

Ingredients

1 stick Butter, softened
1 ½ cup Brown Sugar
2 eggs
2 cups all-purpose Flour
1 tsp Baking Soda
1 tsp Cinnamon
½ tsp Salt
8oz Sour Cream
1 tsp Vanilla
2 Apples, peeled,cored and chopped
Crumb Topping Ingredients:
1/2 cup brown sugar
½ cup all-purpose Flour
½ tsp Cinnamon
4 TB Butter, softened
Brown Sugar Glaze Ingredients:
½ cup Brown Sugar
½ tsp Vanilla
2 TB Water

Instructions

Created on October 10th, 2006

Preheat oven to 350 degrees. Lightly grease a 13x9 baking dish.
In a large mixing bowl, cream together 1 stick butter and 1 ½ cups brown sugar. Add eggs one at a time, beating after each addition.
In a small mixing bowl, sift 2 cups flour, baking soda, cinnamon and salt. Add to the sugar mixture, alternating with the sour cream and vanilla. Stir in apples. Pour into baking dish.

Make crumb topping: Combine brown sugar, cinnamon, flour and butter with pasty cutter or fork. Sprinkle over cake and then bake until set 40-45 minutes. Remove and let cool 10 minutes.

To make glaze: Combine brown sugar, vanilla and water until smooth. Drizzle over cooled cake and let harden slightly. Serve warm and enjoy!
