Apricot Bars/Cranberry Bars

Ingredients

3/4 cup butter (softened)
1 cup brown sugar
1 3/4 cup flour
1/2 tsp soda
1/2 tsp salt
1 1/2 cup old fashioned oats
*Apricot filling:
1 pkg dried apricots
1/4 cup sugar

*If making cranberry bars, substitute 1 pkg of craisins for apricots

Instructions

Cut apricots up – place in small saucepan and cover with water. Cook covered until tender. Add sugar and set aside to cool. (This should take about 10 minutes)

Heat oven to 400 degrees. Mix butter and brown sugar. Add dry ingredients adding the oats last. Press ½ of the mixture into a greased 9x13 pan. Spread the filling on top. Crumble the rest of the mixture on top. Pat lightly. Bake until golden brown. About 25-30 minutes. I check after 25 minutes.
Cut while warm and remove from the pan.

**If making cranberry bars, cook the craisins the same as the apricots. There is no need to cut up the craisins.

Prep Time: 15 minutes. Cooking time: 25-30 minutes.

Makes about 20 bars.
