Bacon Wrapped, Jalapeno and Cheese Grilled Shrimp

Ingredients

1 lb Jumbo uncooked Shrimp (16-20 per lb)
2 oz Pepper Jack Cheese, sliced thin
1 Jalapeno, halved, seeded and cut into thin slices
1/2 lb bacon strips, cut in half
1/4 cup Butter, melted
2 tsp. garlic powder
2 tsp. paprika
2 tsp. ground black pepper
1/2 tsp. cayenne pepper

Remove peel and devein the shrimp. (I leave the tail on for appearance only)
Place shrimp in a medium sized mixing bowl.
In a small mixing bowl, combine garlic powder, paprika, black pepper and cayenne pepper.
Sprinkle 3/4 of the seasoning mixture over shrimp and toss to coat.
Reserve the remaining seasoning to season with later.
Make a slit in the shrimp and place one slice of jalapeno and one slice of cheese inside.
Wrap one slice of bacon around the shrimp and set aside.
Repeat with the remaining shrimp.
Thread the wrapped shrimp onto skewers and season lightly with remaining spice mixture.
Brush shrimps lightly with melted butter.
Grill over high heat until bacon crisps and shrimp is just cooked through, about 2-3 minutes per side.
Remove from grill. Serve and Enjoy!
