Blueberry Muffin

Prep Time: 15 minutes
Cook Time: 20 minutes

Ingredients

- 1 box Golden Butter Cake Mix
- 1 small box French Vanilla pudding
- 1 (8 oz) ctn Cream Cheese, softened
- 2 cups Frozen Blueberries
- 3/4 cup Oil
- 1 tsp Vanilla
- 4 Eggs

Instructions

Created on September 27th, 2005

Preheat oven to 350 degrees.

In a large mixing bowl, beat cake mix, pudding, cream cheese, oil, vanilla and eggs until batter is smooth (about 2 minutes)

Fold in frozen blueberries (if using fresh blueberries,
rinse and dry first)
Using mini or regular muffin tins, spray with vegetable oil spray and fill tins 1/2 full with batter.

Bake at 350 degrees:

  • 15-20 minutes for regular muffins
  • 10-15 minutes for mini muffins

Muffins should be golden brown. Serve with butter and enjoy!
