Preheat oven to 350 degrees.
Line 2 baking sheets with parchment paper.
On a clean flat surface, unroll pizza dough; cut in half and half again making 4 squares.
Spread 1 tsp. of pesto evenly over half of each dough piece, leaving 1 inch border around sides of dough.
Place dough on prepared baking sheet.
Place 1/8 cup shredded mozzarella cheese over pesto on each dough piece.
Ina large skillet, heat butter and olive oil over medium heat.
Add onion and garlic and cook for 2 minutes.
Add chicken and season with garlic salt and pepper and cook for 4 minutes.
Add mushrooms and cook for 4 minutes.
Add spinach and cook for 2 minutes.
Remove from heat; stir in ricotta cheese and Parmesan Cheese.
Spoon chicken mixture over mozzarella; place another 1/8 cup mozzarella cheese over chicken mixture.
Fold dough over filling , crimping edges to seal.
Bake for 20 – 25 minutes or until lightly browned.
Cool for 5 minutes before serving.
Serve with marinara sauce if desired.
