In a dutch oven over medium to medium high heat, brown beef with onion, salt and pepper to taste. Drain meat and return to skillet. Add chili seasoning, evaporated milk, and Rotel. Turn down heat to medium low, add Velvetta cheese and cook till cheese is melted. Serve over fritos and enjoy!
