To make the dough, combine the flour, crisco shortening, baking powder, and salt in the bowl of a stand mixer fitted with a dough hook.
Pour the hot water over the top of the ingredients and turn the mixer to medium speed.
Mix until fully combined and the dough begins to pull away from the bowl
Cover the dough with plastic wrap and let sit for 1 to 2 hours at room temperature.
Pull off pieces of dough to form small balls, around the size of golf balls.
Place them on wax paper and let them rest for 30 minutes.
While dough is resting, heat a large skillet or griddle to medium-high heat.(I prefer a cast iron pan)
Dust rolling pin with a little flour and roll balls out into flat circles.(You can also place the dough balls between 2 sheets of wax paper and roll out into flat circles)
Lay tortilla onto the pan. Let cook for about 30 seconds, check to see if browning, then flip them over to cook on the other side.
Serve warm and enjoy!
