In a large mixing bowl, combine dry ingredients.
Using a pastry cutter, cut shortening into dry ingredients.
Add warm water, a little at a time, until dough is soft and not sticky. You may not need the full 1 1/4 cup.
Knead dough for a few minutes.
Pull off pieces of dough to form small balls, around the size of golf balls. Place them on wax paper and let them rest 10 minutes.
While dough is resting, heat a large skillet or griddle to medium high heat.
Dust rolling pin with a little flour and roll balls out into flat circles.
Lay tortilla onto pan. Let cook for about 15 seconds, check to see if browning, then flip them over to cook on other side.
Serve warm and enjoy!
