Homemade Granola

Ingredients

4 cups Old-fashioned Oats
2 cups sliced Almonds
2 cups shredded sweetened Coconut
3/4 cup Vegetable Oil
1/2 cup Honey
Assorted Dried Fruits - cranberries, figs, raisins, apricots, etc.

Instructions

Created on April 7th, 2006

Preheat oven to 350 degrees.
In a large bowl, combine the oats, coconut and almonds.
In a small bowl, whisk together honey and oil.
Pour honey mixture over oat mixture and stir with a wooden spoon until all is coated.
Pour onto a lightly greased cookie sheet. Bake, stirring occasionally, until mixture turns a golden brown, about 45 minutes.
Remove granola for oven and allow to cool, stirring occasionally. Chop the assorted dried fruits and add to the cooled granola. Store in an airtight container. Serve with yogurt or alone. Enjoy!
