Lemon Chicken Tenders

Ingredients

Paprika
Salt
Pepper
4 boneless, skinless chicken breasts, cut into 2-inch strips
2 eggs, slightly beaten
1 cup seasoned bread crumbs (or panko crumbs)
1/2 cup sugar
1/2 cup fresh squeezed lemon juice (about 2-3 lemons)
1 1/2 teaspoons curry powder

Preheat oven to 400 degrees F (200 degrees C). <?xml:namespace prefix = o ns = "urn:schemas-microsoft-com:office:office" />


Spray a baking sheet with Pam cooking spray.


Season chicken strips with paprika, salt and pepper.


 Dip strips in egg, then dredge in bread crumbs.


Arrange chicken strips in a single layer on prepared baking sheet.
Bake in preheated oven for 15 minutes, turning once.


While chicken is cooking, in a small saucepan over medium-low heat, stir together sugar, lemon juice, and curry powder, stirring until sugar dissolves, about 5 minutes.


Drizzle lemon sauce over chicken, return to oven, and bake 5 minutes more.


Serve as appetizers or with pasta or rice for main course. Enjoy!
