Light&Fluffy Pancake Mix


3 Cups All-Purpose Flour
2 TB Sugar
3 tsp. Baking Powder
1 1/2 tsp Baking Soda
3/4 tsp. Salt
3/4 tsp. Nutmeg

Wet Ingredients for Plain Pancakes
1 egg
1 cup plain Yogurt or buttermilk
1 TB Vegetable Oil
Berries (frozen work best)
blueberries, raspberries, blackberries

Combine all ingredients with a whisk.

Store in airtight container.

To make plain pancakes:

**In a large bowl, whisk together egg, yogurt or buttermilk and oil.

Add 1 cup pancake mix; stir to combine. Leave in the lumps! They’re good.

Melt 1 TB Butter onto griddle or large pan that has been heated over medium/high heat.

Pour 1/4 cup pancake batter onto griddle and sprinkle with 4-5 berries, if desired.

Cook 2-3 minutes on each side.
Serve with butter, syrup and powdered sugar.
