Mexican Goulash

Ingredients

- 1 lb ground beef
- 1 small yellow onion, chopped
- 14.5 oz can Rotel, undrained
- 8 oz can tomato sauce
- 1 can corn, drained
- 1 can black beans, drained
- 3/4 cup water
- 1 1/2 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1 cup uncooked elbow macaroni
- 1 cup Mexican cheese, shredded

In a large nonstick skillet, season ground beef with chili powder, cumin, garlic powder, and salt. Cook ground beef and onion over medium heat until meat is no longer pink.

Drain excess grease from the pan.

Stir in the Rotel, tomato sauce, corn, black beans, and water.

Bring to a boil.

Add macaroni.

Reduce heat; cover and simmer for 20 minutes or until macaroni is tender.

Sprinkle with cheese.

Cover and cook for 2-3 minutes longer or until cheese is melted.
