Pasta Salad

Ingredients

1 12oz pkg pasta (any kind)
1 sm head broccoli florets (cut into bite size pieces)
1/4 cup chopped red onion ;
1/2 cup grated parmesan cheese
1 cup Italian salad dressing
1 6.5 oz jar artichoke hearts (drained and chopped)

Instructions

Bring a large pot of lightly salted water to a boil. Add pasta and cook following package directions. Wash and cut up broccoli while pasta is cooking. Add broccoli to pasta water for the final 2 minutes of cooking time. Drain pasta and broccoli and rinse with cold water until cool.

Drain and chop the artichoke hearts. Chop the red onion. In a large bowl, combine artichoke hearts, parmesan cheese, salad dressing and red onion. Add pasta and broccoli. Refrigerate or serve immediately. Serves 6.
