Pecan Pie Tartlets


12oz cream cheese, softened
2 cups butter, softened
3 1/2 cups flour

2 TB butter, softened
1 1/2 cup brown sugar
1 tsp Vanilla
dash of Salt
2 eggs
1 1/2 cups crushed pecans


Created on November 9th, 2004

Preheat oven to 350 degrees. In a large mixing bowl, combine cream cheese, 2 cups butter and flour. Blend until mixed well. Roll into 1' balls. Press into mini muffin tins. (Do not grease or use muffin liners)

In another large mixing bowl, mix 2 TB butter, brown sugar, vanilla, salt, eggs, and crushed pecans. Using a tsp, fill each muffing tin. Bake 15 -20 minutes or until edges are golden brown. Let cool 2 minutes and remove from muffin tins. Enjoy!
