Pepper-Jack Corn Muffins

Ingredients

1 box Jiffy corn muffin mix (8 1/2 oz box)
3/4 cup Creamed Corn
4 oz Pepper jack cheese, grated
2 large eggs
2 TB melted butter

Instructions

Created on October 8th, 2012

Preheat oven to 425 degrees.

Grease 12 muffin cups with melted butter, set aside.

In a large mixing bowl, combine corn muffin mix, creamed corn, pepper jack cheese and eggs.

Stir until batter comes together, don't overmix.

Fill muffin cups about 2/3 full.

Bake for 12-15 minutes or until golden brown.

Serve with Spicy Black Bean Chili and Enjoy!
