Pesto Lasagna Rolls

Ingredients

10 Lasagna Noodles ( not the oven ready)
28oz jar Marinara Sauce
2 tsp. minced Garlic
15oz ctn. Ricotta Cheese
10oz pkg. frozen chopped spinach, thawed and squeezed dry
3 1/2 oz jar Pesto
1 egg
1 cup grated Parmesan Cheese
1/2 tsp Salt
1/2 tsp Pepper
1 cup shredded Mozzarella Cheese

Instructions

Created on October 15th, 2007

Preheat oven to 350 degrees

Cook lasagna noodles according to package directions; remove from water and cool on dish towel.

While lasagna noodles are cooking, spread 2 cups of marinara sauce in to bottom of 9x13 baking dish.

In a large mixing bowl, combine garlic, ricotta, spinach, pesto, egg, parmesan cheese, salt and pepper.

On cooled lasagna noodles, spread 1/4 to 1/3 cup of ricotta mixture on the noodle.

Roll noodle up; place seam side down in pan.
Repeat with remaining noodles.

Pour remaining marinara sauce over noodles;
sprinkle with mozzarella cheese.

Cover with foil and bake 20 minutes.
Uncover and cook until mozzarella is golden brown; 10-15 minutes.

Serve with salad and bread and enjoy!
