Pumpkin Funnel Cakes

Ingredients

1 Quart Peanut Oil

1 1/2 cup all-purpose Flour
1/4 tsp. Baking Powder
1 tsp. Baking Soda
1 tsp. Cinnamon
1/4 tsp. Salt
1 tsp. Pumpkin Pie Spice

1 egg
1/4 cup Brown Sugar
1 cup Canned Pumpkin Puree
1 cup Milk

Powdered Sugar and/or Cinnamon Sugar to sprinkle on top!

Instructions

Pour the oil into a deep skillet and heat to 375 degrees.

In a medium mixing bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice.

In a large mixing bowl, whisk together the egg, brown sugar, pumpkin puree, and milk. Combine until well blended.

Gradually add the flour mixture, using whisk, stir till smooth.

Pour 1/2 cup of batter into funnel or zip lock bag with corner cut out.

Drizzle the batter into the hot oil using a circular motion, coss over the circle to connect the batter.

Cook until golden, about 2-3 minutes.

Turn the cake over to cook on the bottom side, about 2 minutes.

Use a slotted sppon or tongs to remove form the oil and drain on paper towels.

Sprinkle with cinnamon sugar and/or powdered sugar.
