Pumpkin Pancakes

Ingredients

1 cup light and fluffy pancake mix

Additional dry ingredients:
1/2 tsp. Cinnamon
1/2 tsp. Ginger
pinch of ground Cloves
**Chocolate chips if desired
Wet ingredients:
1 cup Buttermilk
6 TB Pumpkin puree
2 TB melted Butter
1 egg

Instructions

In a large bowl, whisk together pancake mix, cinnamon, ginger and cloves.

In a medium bowl, whisk together milk, pumpkin, melted butter and egg.

Fold wet ingredients into dry ingredients. Stir until combined, leave the lumps. They're good!

Heat griddle or large pan over medium high heat.

Add 1 TB butter to pan; let melt.

Pour 1/4 batter onto buttered griddle.

**Sprinkle chocolate chips onto pancake, if desired.

Cook for 3 minutes on each side.

Serve with butter, syrup and/or powdered sugar or cinnamon sugar.
