Red Velvet Pancakes

Ingredients

1 cup light and fluffy pancake mix

Additional Dry Ingredients:
3 TB Sugar
1 TB unsweetened Cocoa Powder

Wet Ingredients:
1 egg
3/4 cup Buttermilk
1/4 cup Sour Cream
2 tsp. Red Food Coloring
2 tsp. Vanilla


**1/2 cup chocolate chips (doesn’t matter what kind you use) if desired

Instructions

Combine all dry ingredients in a large bowl and set aside.

In a separate bowl, whisk together the egg, buttermilk, sour cream, food coloring and vanilla.

Add wet ingredients to dry, and mix just until combined. Lumps are good!

*Add chocolate chips and fold in batter. If you don't want the chocolate chips, just skip this step.

Melt 1 TB butter onto a griddle or large pan that has been heated over medium/high heat.
Pour about 1/4 cup onto griddle and cook till bubbles start appearing and edges start to cook.
Flip pancakes and cook about 2-3 minutes more.

Sprinkle powdered sugar on top and serve with maple syrup.
