Smashed Garlic Potatoes

Ingredients

18 small Red Potatoes
1/4 Cup Extra Virgin Olive Oil
1 stick Butter, melted
Garlic Salt and Coarse Ground Pepper to season

Instructions

Created on April 23rd, 2012

Preheat oven to 450 degrees.

Wash red potatoes.
Place in large pot and cover with water.
Add 1 TB salt and bring water to a boil.
Cook until fork tender.

On a baking sheet with sides, drizzle olive oil.
Place tender potatoes on the baking sheet leaving plenty of room between potatoes.

With a potato masher or fork, gently press down each potato until smashed; lift and press down again in the opposite direction.

Brush the tops of each potato generously with the melted butter.

Sprinkle the potatoes with garlic salt and coarse ground pepper.

Bake in a 450 degree oven for 20-25 minutes or until golden brown.

Serve and Enjoy!!

**The Pioneer Woman says you can add grated cheese to the top...I would agree!
